Ingredients

  • 2 cup Yogurt, plain, low fat
  • 8 tablespoon dry oats
  • 1 cup Wheat flour, whole‑grain
  • 2 teaspoon Nutmeg
  • 1 egg
  • 1 egg white
  • 1 teaspoon Baking powder
  • 8 teaspoon Sugar Brown
  • 30 gram almonds
  • 8 teaspoon sugar granulated
  • 2 tablespoon vegetable oil
  • 1 teaspoon Spices, cinnamon, ground

Preparation

In a large bowl, stir together yogurt, rolled oats and dried cranberries. Let stand for 30 minutes to moisten the oats.
Preheat the oven to 400°F. Coat 18 standard muffin cups with non‑stick cooking spray.
In a medium bowl, sift together the whole wheat flour, nutmeg and baking powder. To the yogurt mixture, add the egg and egg white, oil and brown sugar and beat until blended. Add the dry ingredients and stir just until combined. Fill each prepared cup 3/4 full.
In a small bowl, stir together the granulated sugar, almonds and cinnamon. Sprinkle an equal amount over each cup of batter.
Bake until a toothpick inserted in the center of a muffin comes out clean, about 15 minutes. Cool in the cups for 5 minutes before serving.
Makes 18 servings.

  • For a colorful touch of Valentine's, substitute red colored sugar for granulated sugar, and mix with the cinnamon and sliced almonds.
