Ingredients

  • 60 gram Green tomatoes
  • 500 gram Raw asparagus
  • 1 cup Onions, sweet, raw
  • cup Lemon juice
  • 1 tablespoon honey
  • Vegetable oil spray
  • 1 teaspoon Sea salt

Preparation

  1. Heat oil in 10‑inch skillet over medium heat.
  2. Cook onion in oil 2 to 3 minutes, stirring occasionally, until tender.
  3. Stir in tomatoes, lemon juice, honey and salt.
  4. Cook 1 minute, stirring occasionally.
  5. Remove mixture from skillet; keep warm.
  6. Rinse out the skillet. Put 1 inch water in skillet and bring to a boil.
  7. Add asparagus.
  8. Bring to a boil; reduce heat to medium.
  9. Cook covered 10 to 17 minutes or until stalk ends are crisp but tender; drain.
  10. Place asparagus in serving dish.
  11. Top with tomato mixture.
Makes 4 servings.

Cooking Tips

  • To add color to your diet, include a variety of colorful fruits and vegetables. They are an excellent source of vitamins, minerals, and dietary fiber.
  • To cook your vegetables without losing the nutrients in the water, you should boil the water, add the vegetables to the boiling water, and not cook them for too long.
